Granny Claudia’s Omelettes

Recipe from an ancient Modenese family

Ingredients:

eggs, salt. rosemary, sage, basil, Traditional balsamic vinegar of Modena DOP

Method

Chop coarse cooking salt, rosemary, a clove of garlic and a little sage and basil together. Add ten eggs and beat thoroughly. Separately, fry a large sliced onion gently in a pan, then remove it from the oil and add it to the beaten eggs, continuing to mix. Bring the oil just used for the onion to the boil and pour the egg mixture into it, taking care because it will cook quickly. Cook the omelette on both sides until golden brown. Serve the omelette cut into segments, sprinkling a teaspoon of balsamic vinegar onto each portion.
