INGREDIENTS: rabbit, 2 sausages, 3 walnuts, olives, half a glass of dry white wine, sage and rosemary
Procedure:
bone the rabbit and beat the meat to flatten it. Spread 2 skinless sausages on the meat, 3 chopped walnuts, 10 olives, 3 sage leaves, a pinch of pepper and wrap everything by tying with string together with a sprig of rosemary. Mix flour and 50% breadcrumbs and pass the stuffed rabbit roll over them. Brown in a pan with oil and then wrap the package in baking paper, add half a glass of dry white wine, put in the oven after wrapping everything in aluminum foil. Leave in the oven at 250 ° for about 45 minutes (medium-sized rabbit). After cooking, thicken the cooking sauce with flour in a pan to obtain a sauce, cut into slices and serve together with the sauce. Spread drops of Traditional Balsamic Vinegar DOP on the slices of the stuffed rabbit and serve.
