These are delicately pressed to obtain a must which is cooked very slowly. So begins the magic of Traditional Balsamic Vinegar of Modena P.D.O.. Once cooked, the must is transferred into a series of small wooden barrels, or \u201cbattery\u201d, which are made from a variety of woods, from oak to chestnut, mulberry to juniper, according to the family tradition.
