Method

Dress the various kinds of lettuce and chicory in season with Balsamic Vinegar and salt to taste, then toss with extra-virgin olive oil. Mix well and serve as a side-dish (or as an hors-d’oeuvre with added flakes of Parmigiano Reggiano cheese and slices of Modena ham).
