The Acetaia Baldazzini Giovanni is a family business, the grapes used are purchased from certified vineyards for the production of Traditional Balsamic Vinegar of Modena and Organic. The pressing is done on site with the traditional, soft method (on foot).
The must is cooked in its own cooking room, where fermentation and acetification then take place.
The acetified must is transferred to the vinegar cellar, when decanting is carried out, in the months between February and April.
